Amazing Chipotle Chicken
Ingredients
- Topping
- Very thinly sliced red onion
- Matchstick radishes
- (Emma likes some tomato too ☺)
- Chicken, cut into strips
- Garlic
- Onion
- Smoked paprika
- Salt
- Pepper
- Cup of Chicken Stock
- Oregano
- Shallots
- Chipotle Chillis
- A bit of chocolate
Method
- 1Bounce a bag around with some salt, cumin, black pepper, chipotle chilli powder, garlic powder and anything else you fancy for the dry rub.
- 2Fry in a big glug of oil until it looks great. Don’t crowd the plate. Do a couple of batches. When fabulous, set side.
- 3In a blender put half a can of toms, cup of stock, garlic, a couple of shallots, smoked paprika, seasoning oregano, chipotle in adobo + anything else you fancy.
- 4When you have finished frying the chicken, pour in the sauce to the hold pan. Whoosh, it’ll go fucking everywhere. Leave it do its thing and reduce. This is awful as it takes ages.
- 5Taste it. The burned bits might make it bitter. Brilliant – hit it with some chocolate.
- 6When it has thickened, put the chicken back in to heat through.
