Asparagus Mimosa
Ingredients
- White (Navarrico)
- Green asparagus
- Dressing
- Ibérico ham or chorizo
- Boiled Eggs (optional)
- Capers (soaked)
- Shallot
- Parsley
- Lemon juice
- Olive oil
Method
- 1Roast green asparagus for 15mins at 180
- 2Chop and shake together the dressing ingredients at a ratio of 2:1of oil to lemon – you need more than you think (e.g. 4-6 tbsp of oil and 2-3 of lemon).
- 3Once green geezers are almost there, add white asparagus and warm through (gently)
- 4Drain asparagus if needed, roll in the ham or dress, and garnish with chopped chorizo and chopped egg.
