Asparagus Mimosa

Ingredients

  • White (Navarrico)
  • Green asparagus
  • Dressing
  • Ibérico ham or chorizo
  • Boiled Eggs (optional)
  • Capers (soaked)
  • Shallot
  • Parsley
  • Lemon juice
  • Olive oil

Method

  1. 1Roast green asparagus for 15mins at 180
  2. 2Chop and shake together the dressing ingredients at a ratio of 2:1of oil to lemon – you need more than you think (e.g. 4-6 tbsp of oil and 2-3 of lemon).
  3. 3Once green geezers are almost there, add white asparagus and warm through (gently)
  4. 4Drain asparagus if needed, roll in the ham or dress, and garnish with chopped chorizo and chopped egg.
