Chicken Rossini

Method

  1. 1The Prep: Butterly breasts, dust 2 in flour, garlic, paprika, salt, white pepper.
  2. 2The Cook: Fry in butter and oil until golden (approx. 2 mins per side).
  3. 3The Sauce: Deglaze pan with a slosh of white wine and 1 tbsp lemon juice. Add 1 tbsp capers.
  4. 4Finish: Pour sauce over chicken. (Note: Use arrowroot to thicken if needed).
