Chilli Chicken Basil
Method
- 1The Stir-fry: Fry 2 chicken breasts (cut into cubes) in groundnut oil.
- 2The Aromatics: Add 2 chopped spring onions and 2 bird’s eye chillies.
- 3The Sauce: Stir in 1 tbsp dark soy, 2 tbsp palm sugar (or brown), and 2 tbsp fish sauce.
- 4Finish: Stir in 1 cup loosely packed basil leaves and serve immediately.
