Chimichurri Pork with Radishes

Method

  1. 1The Pork: Season and oil pork tenderloin; sear 5mins on one side then add radishes to the pan. Sprinkle over oregano. Fry 5mins more till pork is cooked.
  2. 2The Chimichurri: Finely chop (or blitz) a bunch of coriander, 1 shallot, ½ tsp dried oregano, green chilli. Stir in 1 tbsp red wine vinegar and splash of olive oil.
  3. 3Finish: Slice pork and spoon the raw sauce over the top.
