Lamb Kleftiko
Start this one the night before.
Method
- 1Marinade: garlic, salt, pepper, lemon juice, cinnamon, dried and fresh oregano + oil.
- 2The Lamb: 2kg leg of lamb – marinade 2hr or overnight.
- 3Roast – baking paper in tin, add sliced spuds and onions OR baby potatoes, garlic, cherry toms, onion wedges, season + oregano. Put lamp on top. Foil.
- 4The Roast: 160°C for 3 hours. Remove foil. Temp to 180 for 1hour.
