Mediterranean Chicken Traybake
Method
- 1The Tray: chicken thighs, Charlotte potatoes (halved), red onion wedges, garlic, 1 lemon wedges. Toss in oil, salt, pepper.
- 2The Cook: Roast at 180°C for 20 mins. Add wine, cherry tomatoes and pitted black olives. Roast for 20 mins more till crisp and golden.
- 3Finish: Top with 100g crumbled feta, fresh oregano and extra virgin.
