Spicy Lemongrass Stir-Fry

Method

  1. 1Prep veg – burn/blister any combo of green beans, broccoli, asparagus, red pepper 3-4mins
  2. 2The Paste: Blitz a stalks lemongrass, 2 garlic cloves, ginger, shallot, chillies, lime leaves and 1tsp turmeric, add splash water to make a paste
  3. 3The Cook: Fry paste in oil till dry. Add diced chicken thighs; brown. Add veg.
  4. 4The Sauce: 3 tbsp oyster sauce (or sake and soya), fish sauce, dash of sugar or honey, 1 tbsp lime juice. Stir in thai basil or herbs (optional).
  5. 5Finish: Garnish with in peanuts and holy basil. Serve with butter rice.
