Tarte Flambée / Flammekueche

Ingredients

  • Pizza base mix
  • 3 large onions
  • Olive oil
  • 2 garlic cloves crushed
  • 1 tbsp. fresh thyme
  • 1 bay leaf
  • 1-2 tbsp. of cream or fraiche
  • Pancetta or bacon

Method

  1. 1Preheat oven to 230 degrees.
  2. 2Make the pizza base.
  3. 3Thinly slice or mandolin the onions and fry in a little oil & butter till caramelised with the garlic and the herbs. This all takes about 30mins.
  4. 4Turn off the heat and add the cream and seasoning.
  5. 5Spread topping over the pizza base (removing bay leaf). Fry the bacon or pancetta and dot on top.
  6. 6Cook for 10-15mins.
