Tarte Flambée / Flammekueche
Ingredients
- Pizza base mix
- 3 large onions
- Olive oil
- 2 garlic cloves crushed
- 1 tbsp. fresh thyme
- 1 bay leaf
- 1-2 tbsp. of cream or fraiche
- Pancetta or bacon
Method
- 1Preheat oven to 230 degrees.
- 2Make the pizza base.
- 3Thinly slice or mandolin the onions and fry in a little oil & butter till caramelised with the garlic and the herbs. This all takes about 30mins.
- 4Turn off the heat and add the cream and seasoning.
- 5Spread topping over the pizza base (removing bay leaf). Fry the bacon or pancetta and dot on top.
- 6Cook for 10-15mins.
