Broad Beans and Chouriço Tapas
Ingredients
- A small bowl full of broad beans (frozen is fine)
- A small bowl full of peas (frozen is fine)
- Olive oil
- Small chorizo – chopped
- Small red onion
- 2 garlic cloves
- 100ml white wine
- A few mint of coriander leaves
- Splash of red wine vinegar (optional)
Method
- 1Blanch the broad beans and shell.
- 2Heat oil in a non-stick frying pan and add sausage slices. Stir for a couple of minutes. Add onion and cook until both are sticky and a little brown. Add the garlic and stir until you start to smell it. Then add the wine and a couple of twists of pepper. Cook until the wine has evaporated a bit. Then, stir in the broad beans and peas. Cook for a couple of minutes over high heat so the flavours mingle.
- 3Stir in the mint or coriander leaves if using. Finish with a splash of red wine vinegar (if using). Check the seasoning. Serve with a dod of bread.
- 4Asparagus works well in place of the broad beans –blanch it first and add with the veg.
