Carnitas Pulled Pork
Ingredients
- Onion
- Salt
- Pepper
- 2 big tbsp taco seasoning
- ¼ tsp cinnamon
- Tomato paste
- Chilies in adobo
- Water enough to make a paste
- Pork Shoulder
- Stock
- To serve: Tortillas, Lettuce, Sour cream, Guacamole, Salsa
Method
- 1Heat over to 160.
- 2Blitz first 8 ingredients in a food processor, till it's a paste. Remove fat from the shoulder and rub in the paste. Put in ovenproof dish with a lid. Cook for 2 hours. Add stock if needed about ½ way up pork – check to make sure it doesn’t dry out. Put back in for another 2 hours at least. Take the dog for a walk. Come back and make the accompaniments.
- 3Goes well with green (tomatillo) salsa, refried beans and shredded lettuce.
- 4Warm tortillas and serve pork straight from pot.
- 5Red Fresh Salsa - blitz a small red onion with a tin of tomatoes, jalapenos and their vinegar (or fresh chillies and lime juice or vinegar). Add dried oregano and pinch of sugar, salt and pepper, smoked paprika and a few coriander leaves. Blitz, taste and adjust.
- 6Chipotle Mayo – blend a couple of tablespoons of crème fraiche or sour cream with a squeeze of lime juice, salt and pepper and the juice from the chipotles in adobe (tsp) or chipotle hot sauce.
- 7Refried beans – fry small finely chopped onion till soft. Add oregano and smoked paprika. Epazote if you can find it. Season well; add tin of refried beans and mix till warm
