Charred Corn Salsa

Ingredients

  • 1 tin of corn, drained
  • Olive oil
  • Spring onions or shallots
  • Tomatoes or red pepper
  • Jalapenos (plus a little of their vinegar)
  • Fresh coriander
  • Oregano
  • Lime juice
  • Salt and pepper

Method

  1. 1Drain a tin of corn. Heat pan with olive oil and char. Let the blackened corn cool a bit.
  2. 2Chop a combination of spring onions or shallots, tomatoes or red pepper, jalapenos (plus add a little of their vinegar to the mix), coriander, and oregano.
  3. 3Season and dress with olive oil and lime juice.
  4. 4Leave for 15-20 mins before serving.
