Charred Corn Salsa
Ingredients
- 1 tin of corn, drained
- Olive oil
- Spring onions or shallots
- Tomatoes or red pepper
- Jalapenos (plus a little of their vinegar)
- Fresh coriander
- Oregano
- Lime juice
- Salt and pepper
Method
- 1Drain a tin of corn. Heat pan with olive oil and char. Let the blackened corn cool a bit.
- 2Chop a combination of spring onions or shallots, tomatoes or red pepper, jalapenos (plus add a little of their vinegar to the mix), coriander, and oregano.
- 3Season and dress with olive oil and lime juice.
- 4Leave for 15-20 mins before serving.
