Chorizo Cassoulet

Method
- 1Sausages Fry chorizo and pork sausages. Remove.
- 2The Base: Sauté 1 onion, 1 celery stalk, 1 carrot. For 15mins. Stir in garlic & paprika. Then 1 tbsp tomato purée, chicken stock c. 200ml, ½ tin toms, bay, rosemary and season. Boil 3mins.
- 3Cook: add sausages back & tin cannellini beans (drained). Put in oven 45mins. 180C .
- 4The Topping: Top with breadcrumbs mixed with parsley, garlic, oil, lemon zest and juice. Seaon. Grill 15mins till crispy.
