Sichuan Pork and Green Beans
Ingredients
- Runner beans
- Onion - diced
- Garlic – chopped finely
- Ginger – chopped finely
- Chillies dried or fresh
- Mince pork c. 250g for 2 (14g/220g)
- Sauce
- 2-3 tbsps. Soya
- 2 tbsps rice wine
- 1 tbsps mirin (or use sugar)
- 1-2 tsps sambal oelek
- 1tsp Sichuan pepper
Method
- 1The trick is to blacken the beans and have everything prepared and ready to go. Chop the vegetables and mix the sauce ingredients.
- 2Blanch the beans for a couple of minutes and drain/dry well. If not needed…
- 3Heat oil in a pan till smoking, add beans and leave one minute, stir and leave for 30. Should be getting some colour. Remove and set aside.
- 4Fry onion till golden, adding ginger, garlic and chillis as you go. Add pork mince and stir fry a couple of minutes till just cooked. Add sauce ingredients and beans back into the pan. Check seasoning and balance.
- 5Garnish with spring onions. Serve with rice.
