Sichuan Pork and Green Beans

Ingredients

  • Runner beans
  • Onion - diced
  • Garlic – chopped finely
  • Ginger – chopped finely
  • Chillies dried or fresh
  • Mince pork c. 250g for 2 (14g/220g)
  • Sauce
  • 2-3 tbsps. Soya
  • 2 tbsps rice wine
  • 1 tbsps mirin (or use sugar)
  • 1-2 tsps sambal oelek
  • 1tsp Sichuan pepper

Method

  1. 1The trick is to blacken the beans and have everything prepared and ready to go. Chop the vegetables and mix the sauce ingredients.
  2. 2Blanch the beans for a couple of minutes and drain/dry well. If not needed…
  3. 3Heat oil in a pan till smoking, add beans and leave one minute, stir and leave for 30. Should be getting some colour. Remove and set aside.
  4. 4Fry onion till golden, adding ginger, garlic and chillis as you go. Add pork mince and stir fry a couple of minutes till just cooked. Add sauce ingredients and beans back into the pan. Check seasoning and balance.
  5. 5Garnish with spring onions. Serve with rice.
