Fattoush with crispy chickpeas

Ingredients

  • Pita bread
  • Chickpeas
  • Carrots
  • Little gems
  • Cucumber
  • Radishes
  • Spring onions
  • Tomatoes
  • Mint
  • Parsley
  • Olive oil
  • Lemon juice
  • Cumin
  • Coriander
  • Cayenne
  • Sumac

Method

  1. 1Tear up pitas and mix with olive oil (1tbsp) and pinch of oregano, garlic & cayenne powder and salt & pepper. Cool.
  2. 2Chickpea and carrot batons: coat with olive oil (1tbsp), ½ tsp cumin and coriander; a pinch of cayenne and season. Roast for 20-30mins at 160.
  3. 3Salad: little gems, cucumber, radishes, spring onions, tomatoes, mint and parsley.
  4. 4Dressing: 2tsp olive oil, 1tsp lemon/white wine vinegar, squeeze agave, pinch garlic powder and seasoning.
  5. 5To finish add a pinch of sumac.
