French Apple Pie
Ingredients
- 1/6 sugar
- 1 tbsp. flour
- 1/2 cup milk
- 1.5 egg yolks
- 1 tbsp. butter
- 1/4 tsp vanilla extract
- 1 pound tart cooking apples
- 1 tbsp. lemon juice
- 1 tbsp. sugar
- Pinch of nutmeg
- 1/2 cup apricot preserve
- 0.5 egg yolk
Method
- 1Line a dish with 2/3rds of the pastry
- 2In a small saucepan, combine sugar (1/6th) and flour, mix well, stir in the milk. Bring to a boil, while stirring, reduce heat and simmer till slightly thickened - 1 minute.
- 3In a small bowl beat the 1.5 egg yolks lightly, beat in a little of the hot mixture, poor back into the saucepan and beat well.
- 4Stir in 1 tbsp. of butter and vanilla extract and mix well.
- 5Turn into a bowl to cool.
- 6Core, peel, and slide the apples. Sprinkle with lemon juice. In a medium fry pan, heat butter and sugar, add nutmeg, and then add the apple.
- 7Sauté, stirring occasionally until partially cooked - about 5 minutes. Remove from heat.
- 8Heat apricot preserve until just melted.
- 9Preheat oven to 200 C.
- 10Turn filling into pie shell, spread evenly, arrange apple slices, and spread with preserve. Cover with pastry lattice, brush with egg, and bake for 35 minutes.
