Smoked Sausage and Mushroom Pasta

Ingredients

  • Polish sausage - sliced
  • Onion – diced
  • Garlic – crushed
  • Mushrooms sliced
  • Red or green pepper – sliced
  • Paprika
  • Peas
  • Chilli
  • Mustard (Grainy and Dijon)
  • Crème Fraiche
  • Parsley

Method

  1. 1Fry sausage till cooked/colour, clean pan and sweat onions.
  2. 2When soft add garlic and paprika.
  3. 3Put the pasta on to boil.
  4. 4Fry mushrooms. Add peppers and peas. Then mustards – about a tablespoon of each.
  5. 5Take off the heat and add a crème fraiche, a tablespoon at a time, until you get a nice sauce – adding some pasta water to get the right consistency
  6. 6Add pasta and more pasta water if needed (the pasta dries in the oven, so you’ll need more than you think – so you can see there’s a little liquid in the dish.
  7. 7Transfer to an oven dish if needed. Top with breadcrumbs, parmesan, and seasoning, and bake for 20 minutes or so until hot and the top is browning.
