Smoked Sausage and Mushroom Pasta
Ingredients
- Polish sausage - sliced
- Onion – diced
- Garlic – crushed
- Mushrooms sliced
- Red or green pepper – sliced
- Paprika
- Peas
- Chilli
- Mustard (Grainy and Dijon)
- Crème Fraiche
- Parsley
Method
- 1Fry sausage till cooked/colour, clean pan and sweat onions.
- 2When soft add garlic and paprika.
- 3Put the pasta on to boil.
- 4Fry mushrooms. Add peppers and peas. Then mustards – about a tablespoon of each.
- 5Take off the heat and add a crème fraiche, a tablespoon at a time, until you get a nice sauce – adding some pasta water to get the right consistency
- 6Add pasta and more pasta water if needed (the pasta dries in the oven, so you’ll need more than you think – so you can see there’s a little liquid in the dish.
- 7Transfer to an oven dish if needed. Top with breadcrumbs, parmesan, and seasoning, and bake for 20 minutes or so until hot and the top is browning.
