Pork and Lemongrass Meatballs (Lettuce Cups)

Method

  1. 1The Mix: 500g pork mince, 1 stalk lemongrass minced, 1 tbsp grated ginger, coriander, 1 red chilli, 1 tbsp fish sauce.
  2. 2The Cook: Roll into small meatballs. Pan-fry in sesame oil until golden 8-10 mins.
  3. 3The Salad: Toss shredded cucumber and carrots with 1 tbsp rice vinegar.
  4. 4Serve: In little gem lettuce leaves with the meatballs, pickles, and extra chilli sauce.
