Spinach and Chickpeas (Espinacas con Garbanzos)
Ingredients
- Spinach
- Chickpeas (tinned)
- Small onion
- Dried chilli (1 tsp)
- Breadcrumbs
Method
- 1Fry garlic and bread or breadcrumbs and 8 almonds. In a blender, add the sherry vinegar, garlic & fried bread, nuts, cumin, coriander, cayenne, tomato paste, pepper and salt. Blend until smooth. Add some of the water if too thick.
- 2Try sauteing spinach and set aside to drain. Cook paste 4-5mins, add paprika, chickpeas and some passata or tomato paste, then add spinach. Add water if needed.
