Thai Pork Balls
Ingredients
- 500g minced pork
- 2 tbsp. chopped coriander leaves
- 2 tsp mashed garlic
- 1/4 cup fish sauce
- 1 red chilli - seeded & chopped
- 1 tsp grated ginger
- 2 tbsp. crunchy peanut butter
- 1 tbsp. brown sugar
- 1/2 cup coconut cream (or milk)
- 1 tsp chopped basil (optional)
Method
- 1Mix pork with half of the following - coriander leaves, garlic and fish sauce.
- 2Add sriracha, shallot, breadcrumbs, chilli, ginger if you like. Season.
- 3Knead to a smooth consistency and use wet hands to form small balls the size of walnuts.
- 4Fry meatballs in hot (vegetable) oil until golden brown (approx. minutes). Drain and keep warm.
- 5Cook the remaining garlic, chili, and ginger for 1 minute. Add the remaining coriander leaves, the fish sauce, peanut butter, sugar, and coconut cream. Stir on moderate heat until the sauce thickens.
- 6Remove from heat and stir in chopped basil.
- 7Serve meatballs and dipping sauce with toothpicks.
- 8Serve with cucumber salad – thinly sliced cucumber and spring onion and dress.
- 9Dressing: Sesame/groundnut oil x1, rice wine vinegar/lime juice x3, sugar, salt. sriracha (opt.). Marinade 30mins+. Garnish with sesame seeds.
