Yakitori

Ingredients

  • Chicken thighs
  • Spring onions (white bits)
  • Wooden skewers
  • 100ml soy sauce
  • 100ml mirin
  • 50ml sake
  • 2tbsp caster sugar

Method

  1. 1Soak sticks.
  2. 2Boil 100ml soy sauce, 100ml mirin, 50ml sake, and 2tbsp caster sugar for 8-10mins until syrupy and glossy.
  3. 3Fry skewers 5-10mins – brush with marinade (cook gently so soaks up the sauce).
  4. 4Smashed cucumber salad
  5. 51tbsp rice vinegar, 2 tbsp soya, dash mirin + sesame oil. Grated ginger. Sesame seeds. Chilli oil (from crispy chilli).
  6. 6Squashed crispy spuds
  7. 7Boil babies for 15-20min till properly tender. Steam 5mins. Crush.
  8. 8Drizzle oil and season. Roast 200 fan for 20mins.
  9. 9Turn, add cheese and jalapenos. Cook another 10-20mins.
