Yakitori
Ingredients
- Chicken thighs
- Spring onions (white bits)
- Wooden skewers
- 100ml soy sauce
- 100ml mirin
- 50ml sake
- 2tbsp caster sugar
Method
- 1Soak sticks.
- 2Boil 100ml soy sauce, 100ml mirin, 50ml sake, and 2tbsp caster sugar for 8-10mins until syrupy and glossy.
- 3Fry skewers 5-10mins – brush with marinade (cook gently so soaks up the sauce).
- 4Smashed cucumber salad
- 51tbsp rice vinegar, 2 tbsp soya, dash mirin + sesame oil. Grated ginger. Sesame seeds. Chilli oil (from crispy chilli).
- 6Squashed crispy spuds
- 7Boil babies for 15-20min till properly tender. Steam 5mins. Crush.
- 8Drizzle oil and season. Roast 200 fan for 20mins.
- 9Turn, add cheese and jalapenos. Cook another 10-20mins.
