Chicken and Chorizo Tapas (with Migas)
Ingredients
- Chicken thighs
- Chorizo
- Garlic
- Onion
- Paprika
- White wine
- Stale bread (for migas)
- Olive oil
Method
- 1Fry an onion till soft. Add 2 cloves of garlic, then smoked paprika, oregano, thyme, cumin and chilli flakes. Use Sherry or wine to deglaze Add red pepper slices. A tin of tomatoes, tomato paste and bay leaves. With a slosh of stock or red wine if you like.
- 2Add a tin of cannellini beans. Thicken without chicken if necessary. Add back the chicken & chorizo. Simmer for 20+ mins. Add thyme.
- 3Serve with migas or gill with breadcrumb topping. Serve with parsley and crusty bread.
