Chicken and Chorizo Tapas (with Migas)

Ingredients

  • Chicken thighs
  • Chorizo
  • Garlic
  • Onion
  • Paprika
  • White wine
  • Stale bread (for migas)
  • Olive oil

Method

  1. 1Fry an onion till soft. Add 2 cloves of garlic, then smoked paprika, oregano, thyme, cumin and chilli flakes. Use Sherry or wine to deglaze Add red pepper slices. A tin of tomatoes, tomato paste and bay leaves. With a slosh of stock or red wine if you like.
  2. 2Add a tin of cannellini beans. Thicken without chicken if necessary. Add back the chicken & chorizo. Simmer for 20+ mins. Add thyme.
  3. 3Serve with migas or gill with breadcrumb topping. Serve with parsley and crusty bread.
