Chicken Laab
Ingredients
- Chicken mince (or blitzed/chopped chicken)
- Shallots
- Lemongrass
- Lime leaves
- Chillies
- Lime juice
- Fish sauce
- Mint
- Coriander
- Toasted rice powder
Method
- 1Fry finely chopped onion, lemongrass & ginger. Add crushed garlic (1-2 cloves) and sliced red chillies.
- 2Add chicken, fry to just white then add 100ml stock.
- 3Take off the heat and add a mix of ~3 tbsp lime juice, 2 tbsp. fish sauce and some chopped mint leaves..
- 4Or Marion’s version
- 5Salad – little gem cups filled with cucumber, radish, celery, spring onion.
- 6Topping – toasted rice (dry fried) and blitzed / crushed and more sliced chilli.
