Chipotle Pork Tacos

Method

  1. 1The Pork: 500g pork tenderloin, sliced. Toss in 2 tbsp chipotle paste, 1 tbsp honey, 1 tbsp lime juice.
  2. 2The Cook: Flash-fry in a hot pan (5–7 mins) until sticky. Rest.
  3. 3The Slaw: Finely slice red onions and toss in lime juice. Toss shredded cabbage with sour cream, cumin, coriander and seasoning
  4. 4Finish: Serve in warm tortillas with the pork, resting joices, slaw.
