Dry-Fried Green Beans and Minced Shiitake
Method
- 1The Prep: Soak 3 dried shiitake mushrooms, then mince. Mix sauce ingreadients and prep everything ready to stirfry.
- 2The Beans: Dry-fry green beans in a wok over high heat until "blistered" and shrivelled. Remove.
- 3Stir fry – garlic, ginger, sui mi ya cai (preserved mustard greens), chillis (soaked if dry), sichaun peppercorns, mushrooms in that order.
- 4Add beans back in and sauce (Stir in 1 tbsp light soy, ½ tsp caster sugar, and 1 tbsp Shaoxing rice wine, doubanjiang – chilli bean sauce.
Notes
Mince pork would be good too.
