Lisboeta Piri Piri Sauce

Method

  1. 1Roast whole onion in foil for 40mins and toms for 30mins at 200. Uncover and leave to cool.
  2. 2Fry a sliced onion with salt until sticky, Add half to roasted, cools onions and toms.
  3. 3Dry fry 6 garlic cloves in their skins and red chillies till blistered
  4. 4Blitz all of above with smoked paprika, brandy, melted butter 25g, lemon juice, season white pepper and salt

Notes

The Sauce: Makes loads, can make ahead and freeze

To serve – 1/3 of sauce with 70ml of stock.

Garnish Add 6tps stock to fried onions, scatted with broad beans and garlic. Season + paprika.
