Lisboeta Piri Piri Sauce

Method
- 1Roast whole onion in foil for 40mins and toms for 30mins at 200. Uncover and leave to cool.
- 2Fry a sliced onion with salt until sticky, Add half to roasted, cools onions and toms.
- 3Dry fry 6 garlic cloves in their skins and red chillies till blistered
- 4Blitz all of above with smoked paprika, brandy, melted butter 25g, lemon juice, season white pepper and salt
Notes
The Sauce: Makes loads, can make ahead and freeze
To serve – 1/3 of sauce with 70ml of stock.
Garnish Add 6tps stock to fried onions, scatted with broad beans and garlic. Season + paprika.
