Mustard Pork with Spinach

Method

  1. 1The Pork: Flatten the pork first. Season with salt, pepper, and onion powder.
  2. 2Fry: A minute or two on each side. Set aside.
  3. 3The Veg: Fry off thinly sliced leeks in butter/oil. Add spinach and wilt together for 2–3 mins. Add mustard, splash of stock and crème fraiche .
  4. 4Finish: Serve pork over the leeky spinach.
