Runner Beans with Shallot Butter
Ingredients
- Runner beans, topped, tailed and cut into diagonal ribbons
- Small onion, finely sliced
- Butter (lots)
- Vinegar (a little)
- Sugar (a little)
- Salt and pepper
Method
- 1Blanch the beans (topped, tailed and cut into diagonal ribbons) for 4-5 minutes.
- 2Fry small finely sliced onion till soft.
- 3Add lots of butter and the beans.
- 4Finish with a little vinegar and sugar and let that bubble away.
- 5Season well.
