Runner Beans with Shallot Butter

Ingredients

  • Runner beans, topped, tailed and cut into diagonal ribbons
  • Small onion, finely sliced
  • Butter (lots)
  • Vinegar (a little)
  • Sugar (a little)
  • Salt and pepper

Method

  1. 1Blanch the beans (topped, tailed and cut into diagonal ribbons) for 4-5 minutes.
  2. 2Fry small finely sliced onion till soft.
  3. 3Add lots of butter and the beans.
  4. 4Finish with a little vinegar and sugar and let that bubble away.
  5. 5Season well.
