Tangy Mustard Coleslaw

Ingredients

  • Grated carrot (1-2)
  • Shallot or small onion thinly sliced
  • Lettuce or cabbage ¼ or third
  • Dressing
  • 1 Tbsp mayonnaise
  • 1-2 Tbsp plain Greek yoghurt
  • 1 Tbps mustard (grainy or Dijon)
  • 30ml red wine vinegar
  • Pinch sugar or syrup
  • Salt & pepper

Method

  1. 1Mix dressing ingredients together - whisk or shake in a jar.
  2. 2Shred the veg and combine. Chill for 20mins.
