Carrots with Chilli Vinaigrette

Ingredients

  • Carrots
  • Oil for roasting
  • Green chillies, thinly sliced
  • Olive oil
  • Lemon juice
  • Salt and pepper

Method

  1. 1Peel and cut carrots into large batons, e.g. quarters, coat in oil, and roast for 20-30 minutes at 180 or so.
  2. 2Make a dressing of thinly sliced green chillies, olive oil, lemon juice, pepper, and salt.
  3. 3Dress carrots while still warm and serve.

Super simple and oh so tasty.
