Carrots with Chilli Vinaigrette
Ingredients
- Carrots
- Oil for roasting
- Green chillies, thinly sliced
- Olive oil
- Lemon juice
- Salt and pepper
Method
- 1Peel and cut carrots into large batons, e.g. quarters, coat in oil, and roast for 20-30 minutes at 180 or so.
- 2Make a dressing of thinly sliced green chillies, olive oil, lemon juice, pepper, and salt.
- 3Dress carrots while still warm and serve.

Super simple and oh so tasty.
