Charred Leeks and Chilli Romesco

Ingredients

  • Baby leeks
  • 4-5 baby tomatoes
  • 1 red chilli
  • Red pepper (a little)
  • Oil
  • Hazelnuts (c.30g)
  • Almonds (c.30g)
  • Paprika
  • Garlic
  • 1 tsp red wine vinegar

Method

  1. 1Roast 4-5 baby tomatoes, a red chilli and a little red pepper in oil for 5 mins.
  2. 2Roast a handful (c.30g) of hazelnuts and almonds for 7-10 mins.
  3. 3Blitz the nuts, remove and blitz the rest with paprika, garlic and 1 tsp red wine vinegar. Mix.
  4. 4Boil the leeks for 3-4 mins, drain, dry and char in a frying pan or griddle pan till tender.
  5. 5Serve leeks with the romesco sauce.
