Charred Leeks and Chilli Romesco
Ingredients
- Baby leeks
- 4-5 baby tomatoes
- 1 red chilli
- Red pepper (a little)
- Oil
- Hazelnuts (c.30g)
- Almonds (c.30g)
- Paprika
- Garlic
- 1 tsp red wine vinegar
Method
- 1Roast 4-5 baby tomatoes, a red chilli and a little red pepper in oil for 5 mins.
- 2Roast a handful (c.30g) of hazelnuts and almonds for 7-10 mins.
- 3Blitz the nuts, remove and blitz the rest with paprika, garlic and 1 tsp red wine vinegar. Mix.
- 4Boil the leeks for 3-4 mins, drain, dry and char in a frying pan or griddle pan till tender.
- 5Serve leeks with the romesco sauce.
