Cheese, Onion and Olive Bites

Ingredients

  • 1 medium onion (red) diced
  • 175g self raising flour
  • ½ tsp salt
  • ½ tsp mustard powder
  • ½ tsp cayenne pepper
  • Black pepper
  • 25g butter
  • A handful of olives green or black, pitted
  • 40g parmesan cheese
  • 40 strong cheddar
  • 1 large egg
  • 2-3 tablespoons milk

Method

  1. 1Heat oven to 200 degrees.
  2. 2Fry onion in a little oil until nicely browned. Cool.
  3. 3Sift flour, salt, mustard powder, and cayenne into a large bowl. Add a good grinding of black pepper (the scones need a piquant bite). Rub in the butter. Add cooled onion, chopped olives, and two-thirds of the cheeses, forking together evenly.
  4. 4Beat the egg and mix in first with a knife, then your hands. Adding only enough milk (or water) to make a soft dough.
  5. 5Turn the dough out onto a lightly floured surface; knead it gently until smooth. Then roll (or press) it out to about ¾ inches (2cm) thick. Use a 1-¼ inch (3cm) cutter and stamp out the scones. Lightly need and reroll any trimmings.
  6. 6Brush cut scones with milk (or egg) and top with remaining cheese. Bake near the top of the over for 10-12 minutes. Cool on a wire rack.
  7. 7(Add poppy seeds, parmesan, sesame seeds or black onion seeds before baking for variety)
