Cheese, Onion and Olive Bites
Ingredients
- 1 medium onion (red) diced
- 175g self raising flour
- ½ tsp salt
- ½ tsp mustard powder
- ½ tsp cayenne pepper
- Black pepper
- 25g butter
- A handful of olives green or black, pitted
- 40g parmesan cheese
- 40 strong cheddar
- 1 large egg
- 2-3 tablespoons milk
Method
- 1Heat oven to 200 degrees.
- 2Fry onion in a little oil until nicely browned. Cool.
- 3Sift flour, salt, mustard powder, and cayenne into a large bowl. Add a good grinding of black pepper (the scones need a piquant bite). Rub in the butter. Add cooled onion, chopped olives, and two-thirds of the cheeses, forking together evenly.
- 4Beat the egg and mix in first with a knife, then your hands. Adding only enough milk (or water) to make a soft dough.
- 5Turn the dough out onto a lightly floured surface; knead it gently until smooth. Then roll (or press) it out to about ¾ inches (2cm) thick. Use a 1-¼ inch (3cm) cutter and stamp out the scones. Lightly need and reroll any trimmings.
- 6Brush cut scones with milk (or egg) and top with remaining cheese. Bake near the top of the over for 10-12 minutes. Cool on a wire rack.
